Ever wonder how great independent restaurants get started? The idea, the concept, the recipes - they all have to come from someone. And in this case it was from the minds of Brent and Melvin Dixon of Collinwood, Tennessee.

After 5 successful years of operating Sarge's Shack just off I-65 in Pulaski, the father and son team decided to open a similar restaurant in Lawrenceburg. They opened Chaparral's Steakhouse on November 4, 1995 in what is now the China Buffet Restaurant on Hwy 43. They thought that Lawrenceburg would really enjoy a different kind of steakhouse than was there already - and boy were they right! The customers loved it immediately. With just the right atmosphere and those delicious hand-cut steaks, Chap's was well on its way to being one of Lawrenceburg's most famous restaurants.

The crowds were growing as word was spreading, and Brent and Melvin soon decided that they had outgrown the building. So just six short years later on November 14, 2001 they swung the doors open on the new Chaps just a mile down the road on the north end of the strip. Now with more than 7200 square feet of space, the boys could offer so much more!

With a beautiful bar, private dining rooms, and the kitchen of their dreams, they were on their way. Now the neon lights welcome visitors from near and far. Friendly service and the best steaks and ribs anywhere are their trademarks. That's why they say...
